Peanut Butter Cup Cookies

We love these yummy cookies.

I wanted to share the SUPER easy recipe.

Mix together:
1 cup creamy peanut butter
1 cup sugar
1 egg

Drop by teaspoonfuls into a mini muffin pan. Bake at 350 degrees for about 12 minutes.

When they come out of the oven, press a chocolate peanut butter cup down into the middle until the sides are flush with the cup. Wait for them to cool in the pan, then remove (sometimes using a butter knife to help).
